Lyons Carrot Cake

Lyons Carrot Cake

2 Cups Flour

1 1/2 teaspoons soda

3 Teaspoons of Baking Powder

1 teaspoon salt

1 tablespoon cinnamon

1+ teaspoon nutmeg

2 Cups sugar

1 1/2 cups oil

1 egg beaten

1 ( 8 1/4 ounce) can crushed pineapple, drained. With some juce

12 cups grated carrots

1/2 cups raisins

1/2 cup walnuts

cream cheese frosting

Sift together the flour, soda, baking powder, salt, cinnamon, nutmeg, and sugar. Add oil, eggs, drained pineapple, carrots, raisins and walnuts. Mix well and turn into a greased 13x9 inch baking pan. Bake at 350 degrees 1 hour. Ice with cream chees frosting.

Cream Cheese Frosting

1 pound powdered sugar

1/2 cup butter(soft)

1 (8 ounce) package cream cheese(soft)

1 teaspoon vanilla

sift Powder sugar in and mix until smooth
